I remember as a child hearing all about how good carrots are for your eyesight. Since then, I've learned about the many other great benefits of this root I have come to love so much. Besides all the health benefits they offer, carrots are a particularly good ally of the diet when you're looking to shed a few pounds. That is why this post is another fantastic excuse to incorporate carrots, with a kick of ginger to bring out the sweetness that is already there and waiting to explode. Hope you like it!

Of course there are a milion ways to bring carrots into your diet, but this juice is a refreshing and healthy option you will definitely enjoy.
Carrot and ginger juice
Makes: 1 small glass
5 carrots
1 inch of ginger root
1 cup of hot water
1 tablespoon of 100 percent natural honey
1/2 cup of fresh orange juice
Directions:
1. Wash the carrots well. Cut then in pieces. Peel the ginger and cut in half. Place carrots and ginger in a blender and purée.
2. Add the hot water and let it stand for 20 minutes.
3. Strain over a large cup.
4. Add honey and orange juice
5. Serve over ice
