This camote smoothie will keep you healthy all winter long

I'm going to tell you a secret I'm not very proud of: I just recently started appreciating sweet potatoes. I know, what took me so long, right?! I grew up with a camote loving mother and for some reason, I wasn't into them until now. Now I like them so much that I've even started to make camote batidos. Sweet potatoes have immune boosting properties because they contain vitamins D, B6 and C. Okay, so this recipe is simple, but it does take some prep time or thinking ahead time because you will need to have a cold baked sweet potato on hand to make it. I bake a few sweet potatoes ahead of time and keep them in the fridge.

Baking a sweet potato is easy, just wash it, put it in an oven that has been preheated to 350°F and bake until tender. It takes about an hour. I leave the peel on while I store it in the fridge and take it off right before using. It comes off easily, you can do it with your hands.

Camote smoothie

Ingredients

1/2 a cold peeled baked sweet potato
1 ripe banana
1 cup almond milk
1/4 teaspoon cinnamon
Handful of ice cubes (optional)

Directions

Put all the ingredients in a blender and blend until smooth. Pour into a glass and enjoy!
