Easy & tasty summer pasta salad to avoid the kitchen during this heat wave (EXCLUSIVE RECIPE)

There's one thing I love about summer and it's that things become so much simpler at mealtime. I sauté garlic slices in olive oil and once I cook the pasta al dente, I strain it, put it in a bowl and season it with the garlic oil. The rest is adding the tomatoes, cheese and fresh basil leaves.

This pasta can be served hot or warm. It can also be refrigerated and served cold as a salad. I love to prepare it in advance so I don't have to be in hurry when serving dinner. I hope you like my recipe.

Pasta Caprese

Makes 4 servings

__Ingredients
__2 cups of noodles
3 Tbs. of olive oil
1 garlic clove finely sliced
1 cup of grape or cherry tomatoes
1 cup of bocconcini
1 cup of fresh basil leaves
Coarse sea salt
Crushed red pepper flakes

Preparation

Put the water for the pasta to boil. In a skillet over medium heat sauté the garlic in olive oil, until golden, 5-6 minutes. Set aside. Cook the pasta al dente and once it's strained, let some fresh water run on top to stop cooking. Strain the pasta again and put it in a bowl with the olive oil and garlic, tomatoes, bocconcini, salt and pepper, and combine. Add the basil, combine and serve.
