Puerto Rico, La Isla del Encanto, is very well known this season because Boricuas celebrate the longest Christmas. Since the Friday after Thanksgiving, they decorate their homes with Christmas ornaments and the party doesn't stop until San Sebastian Day, on January 20. That may be the reason they invented this yummy tembleque, the easiest dessert ever, so you always have something sweet to give to people coming to visit to your house. I found the recipe in my good friend Jeannette Quiñones-Cantore's cooking blog Sazón Boricua.

Tembleque
Makes 6-8 servings
Ingredients
1 15-oz can of coconut cream
2 cups of water
2/3 cup of cornstarch
1 cinnamon stick
3 cloves
1 pinch of salt
Preparation
1. Mix the coconut cream, water, spices and salt really well.
2. Put this mixture into a saucepan and cook over medium heat stirring constantly until it boils.
3. Remove the spices (cinnamon and cloves).
4. Dilute cornstarch in a little water and add it to the pot. Continue cooking, stirring constantly, until it boils and thickens.
5. Remove from heat and pour the mixture into a baking dish.
6. Once the mix is completely set, turn it over on a platter and sprinkle with cinnamon.
7. Cut into cubes and it's ready to serve.
