Bandeja Paisa is a typical dish of the Antioquia region in Colombia, and I would say that, along with ajiaco Santafereño, it is one of the most representative dishes of the so-close-to-my-heart Colombian cuisine.
As its name implies, the bandeja Paisa is served on a platter because so much delight cannot be fitted in just one plate. In fact, the recipe consists of several recipes. But don't worry, because bandeja Paisa is composed of things we eat every day: red beans, ground beef, white rice, arepas, pork, plantains, and chicharrón.

Bandeja Paisa
Makes 6 servings
Ingredients for the beans
2 cups red beans
1 green plantain, peeled and coarsely chopped
1 medium carrot, peeled and grated
1 large onion, chopped
1/2 pound bacon
2 tablespoons oil
1 cup hogao (made of tomato, onion, cilantro and leek)

Preparation of the beans
- The night before, soak the beans in 8 cups of water.
- The next morning, cook the beans in the same water and add the plantain, carrot, onion, and bacon.
- When beans begin to open, add the oil, salt to taste, and the hogao. Cook for 10 minutes and reserve.
Ingredients for the ground beef
2 tablespoons oil
2 stalks chopped leek
2 cloves garlic, minced
3 medium tomatoes
2 pounds ground beef
Cilantro
Salt
Preparation of the ground beef
- In a saucepan with oil, make a sofrito with the leek, garlic, and tomatoes.
- When the sauce is ready, add the meat and cook as usual.
- When the meat is cooked, add salt to taste and cilantro and reserve, covered, until serving time.
Ingredients for the ají pique
Minced chives
Cilantro
Chopped ripe tomato
Pepper or chile seeds
Salt
Vinegar
Achiote
Preparation of the ají pique
Mix all ingredients and marinate in the refrigerator.
Serving
In individual serving trays, serve the ground beef with rice, fried egg, arepa, chicharrón, chorizo, fried ripe plantains or fried green plantains, and avocado. Serve with a bowl of red beans. Don't forget to have the ají pique handy.
