
Casseroles or bakes are one of my favorite one-pot recipes. They are so easy to make and the results are so deliciously satisfying and fillng. I just came across this ridiculously simple recipe for a chicken and tortilla enchilada bake that I cannot wait to make. It only has four ingredients in it. It doesn't get any simpler than that.
Now, I've made enchilada bakes before and I know that purists scoff at the idea of doing a casserole shortcut version of enchiladas, but I think that's because they are kitchen martyrs who have never actually tasted how delicious an enchilada bake can be. I'm serious. My mom looked at me all cross-eyed when I served her the first enchilada bake of her life, but when that first forkful hit her mouth, she went from bizca to all compliments and, "Dame la receta, por favor."

Chicken and Tortilla Enchilada Bake
Ingredients
2 cups prepared enchilada sauce
9 corn tortillas (6-inch)
2 cups shredded or chopped cooked chicken
2 cups shredded Mexican cheese blend (about 8 ounces)
