Healthy Coconut Plantain “Rice” Pudding for a fast & easy breakfast

Growing up, one of my favorite things to eat were (and still are!) platanos. Being half-Colombian meant I was already predisposed to loving tostones, maduros, maduros con queso, and so forth. As delicious as they may be, all that frying really takes a toll on my waistline!

However, I found the PERFECT recipe that will allow you to keep platanos in your diet, without packing on the pounds. In fact, you might just lose a few!

The other day I thought of this genius idea of having platanos in place of my morning oatmeal. I figured, I already add bananas to my oats, so why not experiment with some plantains? In fact, I happened to come across a recipe that was music to my ears. How does Coconut Plantain "Rice" Pudding sound? Delicious, right?!

I put it to the test, and let me just say that this is hands-down one of the best dishes I've made and it was so fast and easy! It is naturally gluten-free for those of you who have wheat allergies– and it is healthy! Yes, plantains are good for you in case you were wondering;what counts is that you prepare them in a healthier way.

Trade in your morning oatmeal for this delicious alternative.  You can find the ingredients you need below! All it takes is 20 minutes to make!

Ingredients:

  • 1 1/3 cup vanilla almond milk
  • 1 medium-ripe plantain, peeled
  • 1/8 tsp cinnamon
  • 1/4 cup raisins (or dried fruit of your choice)
  • 1-2 tsp coconut flakes
  • optional- seeds, nuts, and other topping of your choice
