Easy apple & dulce de leche empanadas that are to die for

Today we're celebrating one of our most amazing contributions to world cuisine: It's World Dulce de Leche Day! Call it what you will–dulce de leche, arequipe, cajeta–this sweet treat plays an amazing supporting role to almost any dessert. But in the recipe I'm about to share, it is the undisputed star. You're going to love it!

Our friends at La Lechera celebrated with us today and shared this amazing recipe of empanadas with apple and dulce de leche. ¡Buen provecho!

Ingredients:

1/4 cup water
1/2 lemon, juiced
2 green apples, peeled and chopped
2 tablespoons dulce de leche (such as La Lechera Dulce de Leche by Nestle)
2 teaspoons all-purpose flour
1/4 teaspoon ground cinnamon
10 (one 14-ounce package) frozen store-bought empanada dough discs, defrosted
1 large egg, beaten
2 tablespoons cinnamon-sugar

To make:

PREHEAT oven to 450° F. Line baking sheet with parchment paper.

COMBINE water and juice from lemon in medium, microwave-safe bowl. Add apples to water mixture; stir to coat. Microwave on HIGH (100%) power for 2 minutes.

STIR in dulce de leche until melted. Stir in flour and cinnamon.

PLACE empanada discs on prepared baking sheet. Place a rounded tablespoon of apple mixture on each disc.

FOLD in half, sealing edges with fingers or tines of a fork.

BRUSH with egg. Sprinkle with cinnamon-sugar.

BAKE for 15 minutes or until golden.

TIP: Ready-made refrigerated pastry sheets can be used in place of empanada discs. Simply use an inverted bowl that measures 5 inches in diameter to cut out circles.
