Latin Crock-Pot: Scrumptious salsa verde pork & pepper stew

Some days I wish there were a kitchen pot that I could rub causing a genie to miraculously appear. The genie would grant me a wish, just one a day, and my wish would go something like this: "Oh spectacular Genie of the Kitchen, could you please prepare a delicious dinner for my family? Surprise me!" Hours later the smells of something scrumptious would waft through our home as I jubilantly called out to all, "It's dinner time!"

Alas, I have no such pot with no such genie, but I do have a slow cooker, which can sort of do the same thing with a little effort from me. Take for example this salsa verde pork and pepper stew that pairs spectacularly with white rice. No genie necessary, but magical nonetheless.

Salsa Verde Pork and Pepper Stew

Total time: 4 hours and 25 minutes
Makes: 6 servings

Ingredients:

1 boneless pork shoulder (about 2 pounds), cut into 1 1/2-inch pieces
1/2 cup all-purpose flour
2 tablespoons vegetable oil
1 16 ounce jar of salsa verde, like Pace® Salsa Verde
2 large red and/or green peppers, diced (about 2 cups)
3 large carrots, thickly sliced (about 1 1/2 cups)
Chopped fresh cilantro leaves
