I'm sure, like me, you grew up hearing that it is a sin to throw food away. I can listen to mi abuelita repeating over and over that you had to eat everything, because there were many poor people in the world who did not have a crust of bread to put in their mouth.
Abuela not only made us eat anything and everything, but she was also the queen of recycling. For example, these rice fritters, made with leftover rice. My kids love them. Keep reading to see how I say this ia an easy, cheap and nutritious recipe.

Rice fritters
Makes 6 servings
__Ingredients
__3 cups of cooked white rice
2 eggs lightly beaten
2/3 cup of fresh cheese, shredded
3 tablespoons of all purpose flour
1/2 cup of skim milk
1 tablespoon of sugar
Vegetable oil to fry
sugar to sprinkle the fritters
Preparation
1. In a bowl combine all the ingredients.
2. In a pan heat some oil over medium heat.
3. With a spoon, pour some of the rice batter in the pan.
4. Fry the fritters until golden both sides.
5. Place the fritter on paper towels to absorb the oil.
6. Before serving, sprinkle with some sugar.
7. Serve hot or warm.
