This spicy strawberry, avocado & grilled corn salsa will make everyone in your familia happy

Recently, I was invited by the California Strawberry Commission to visit strawberry farms in northern California. Now, I was already a fan of strawberries, but I had no idea that they could be so versatile. I thought of them as a great healthy fruit that could also be made into desserts, jellys, and jams, but that's about it. Then I ate food created with strawberries by marvelous chefs and a whole new world of possibilities opened up. So much so that I created what I like to call salsa fresa.

My salsa fresa is a strawberry, avocado, and grilled corn salsa that I am super proud of. It is so yummy and refreshing. Why had I never thought of making salsa with strawberries before? It totally works.

I'm not good at keeping secrets and the recipe to this yummy salsa is not something I want to keep a secret. If you love salsas, please try it out. Even my sometimes snobby foodie husband thought it was awesome. Please don't tell him I said he's sometimes a snobby foodie, he disagrees.

Spicy Strawberry, Avocado, and Grilled Corn Salsa

Ingredients

10 large strawberries, hulled and chopped
Kernels from 2 large ears of corn, grilled
2 medium-sized grilled jalapeños- stemmed, peeled, seeded, and chopped
2 ripe avocados –peeled, pitted, diced
Juice from 2 limes
Drizzle of olive oil
Splash of apple cider vinegar
Salt to taste

Directions

Toss everything into a large bowl, mix it up, yum, yum!

Serve with tortilla chips.
