There is nothing like an egg-based breakfast to start your day. But if it's Sunday, and also Father's Day there is nothing like a vegetable omelet filled with melted cheese. If you serve it with harsh brown potatoes or sweet potatoes and fresh fruit, you will have a perfectly balanced brunch and will be able to forget about lunch!

This recipe includes zucchini sautéed with onion and garlic, bacon bits, some red bell pepper for color and lots of sharp Gruyere cheese. If you're counting calories, you can substitute ricotta for the Gruyere. If you want to make it really light, use 1 egg and 2 egg whites, omit the bacon and use cooking spray instead of butter.

Ingredients for 1 omelet...
Ingredients
1 tablespoon golden bacon bits,
¼ cup onion, thinly sliced scallion or shallot
1 garlic clove, minced
¼ cup red bell pepper deveined, seeded and minced
1 cup thinly sliced zucchini
1 tablespoon olive oil
1 tablespoon butter
½ cup Gruyere cheese
Salt
Freshly ground black pepper
Sauté the vegetables...
In a skillet over medium heat, sauté the onion and garlic in olive oil for 1 minute. Add the zucchini and saute for 2-3 minutes.
Add color and flavor...
Add the red bell pepper and bacon and sauté 2 minutes. Reserve.
... and now the eggs...
In the same skillet, melt the butter and add the eggs. Cook for a minute.
Put everything together...
Add the zucchini sautéed with onion, bell pepper and bacon. Season with salt and pepper and cook for 4-5 minutes with a spatula carefully flips. If you is not perfect, do not stress it with cheese fix it. Once the omelet is cooked, fold it in two and put the cheese on top to melt.
Ready to eat!
Serve hot. This is a real explosion of flaor and color!
