Even though I'm not that religious, I like participating in Easter traditions because it is a time to get together with family and, if I'm being honest, I still enjoy decorating eggs just for the fun of it.
But what should we do with those eggs after the kids are done with their Easter Egg Hunt?
I hate to waste food, so I started looking for recipes to convert those hard-boiled eggs into something delicious. From some Latin-inspired deviled eggs to a layered potato and egg salad from a Guatemalan chef, these are great ways to use those eggs to make a delicious meal for the whole family.

Bacon-Jalapeño Deviled Eggs (recipe courtesy of Home Cooking Memories)
Ingredients:
1 dozen large eggs
1/3 cup mayonnaise
4 strips cooked bacon, crumbled (or 4 tablespoons real bacon bits)
2 tablespoons finely minced jalapeño (about 1/2 jalapeno, stem/seed removed)
1/4 teaspoon cumin
1 teaspoon Frank's Red Hot Sauce
Salt and pepper, to taste
__Directions:
__1. Hard-boil the eggs according to your favorite method, or follow these steps: place eggs in a pot and cover with 1-2 inches cold water. Place on stove and bring eggs to a boil. Boil for 1 minute and then immediately turn off heat. Cover and allow eggs to sit in the hot water for 15 minutes. After 15 minutes, drain off hot water and place pot in your sink and allow cold water to run over the eggs until they are cooled.
2. Peel eggs and cut each egg in half lengthwise. Carefully remove egg yolks from egg whites and place them into a small bowl.
3. Mash egg yolks with a fork and then mix in remaining ingredients. Season with salt and pepper, as needed.
4. Spoon mixture into a sandwich size zipper bag and squeeze out excess air. Snip off a tiny amount of one corner of the bottom of the bag which will allow you to squeeze the mixture out of the bag and into the egg whites. Can also be spooned into egg whites, if you prefer.
5. Top with a small piece of bacon, if desired.

Layered Potato and Egg Salad (recipe courtesy of Sandra's Kitchen)
Ingredients (For the Potato Layer):
4 pounds yellow potatoes (such as Yukon gold), boiled, peeled, and mashed
½ cup minced white onion
½ cup key lime juice
1 teaspoon ají amarillo paste 2 teaspoons salt, or to taste
½ teaspoon freshly ground black pepper, or to taste
¼ cup extra-virgin olive oil
Ingredients (For the Egg Layer):
9 hard-boiled eggs, finely chopped
½ cup finely chopped pimiento-stuffed green olives
2 tablespoons minced capers
⅓ cup mayonnaise
1 teaspoon yellow mustard
¼ teaspoon freshly ground black pepper
Pinch salt
1 cup sliced pimiento-stuffed green olives
¼ cup finely chopped chives
Directions:
Spray a 9x13x2-inch casserole dish with cooking spray. Place the mashed potatoes in a large bowl; add the onions and stir to combine. In a medium bowl, whisk together the lime juice, ají amarillo, salt, and pepper until the ají paste is dissolved. Whisk in the oil and add the dressing to the potato mixture, stirring well to combine. In a medium bowl, combine the eggs, olives, capers, mayonnaise, mustard, pepper, and salt; stir to combine. Spread half of the potato mixture evenly in the prepared dish. Spread the egg salad evenly over the potato layer; top with the remaining potatoes. Garnish with the olives and chives. Chill for at least 1 hour (up to 24 hours) before serving.

Fried Egg Sandwich with Salsa (recipe courtesy of Eat Happy)
Ingredients:
2 slices of bread
1 egg
Salsa
Other veggies, per your choice
Directions:
Have two slices of bread ready. Put one slice of bread in the toaster, and simultaneously heat fat in a skillet for egg frying. The fat can be olive oil, butter, bacon grease, anything you'd like. Crack egg into the fat once it's hot. Toast will probably pop up now. Butter one side if you'd like (I do) and place on a plate. Put second slice of bread in the toaster. Check egg, and cook to your liking. I don't do runny eggs and often attack the yolk to make sure it is completely cooked through. Place egg on buttered toast, top with a little salsa. Second piece of toast should pop up at this point. Butter, place on top, and eat.
