While tomatillos were not a staple in my mom's Puerto Rican kitchen, they have certainly been welcomed into mine thanks to my Mexican friends (thank you!!!) My former neighbor Lara has always said that her dishes enjoy the south-of-the-border flair thanks fo fresh (or canned) tomatillos and I've been inspired by her to serve them to my family. The following easy, quick AND HEALTHY recipe is one she shared with me years ago and I still love it! Hope you do too…
INGREDIENTS:
3 tablespoons olive oil
2 chopped garlic cloves
1 pound of tomatillos, peeled and chopped
1 medium sized white onion
sal and pepper to taste
1/4 cup of water
1 pound of shrimp, peeled and devained
1 cup Cotija or Feta cheese
1/3 cup chopped cilantro
Juice of a lemon
PREPARATION:
1. Heat up oil over medium heat in a pan that can be later transferred to the oven. Add garlic, tomatillos and onion and cook for about 10 minutes until softened. Season with salt and pepper.
2. Add water, cheese and shrimp. Move pan to a preheated 425 degree oven and cook for an additional 10 minutes.
3. Serve over rice, over pasta, in tacos or with salad on corn tortillas. Top with chopped cilantro and sprinkle lemon juice over it.
