One of my favorite things about the summer time is indulging on ice cream. For me, this frosty treat is a guilty pleasure that I enjoy in all forms, whether it's creamy or in a fruit bar. What I don't like about many ice cream brands is that they contain many ingredients that I can't even pronounce, which makes me believe it's less healthy than they seem to be.
That's why I prefer to make my own at home and not only do I know what ingredients are going into my ice cream, it's super simple too!

If you are sensitive to dairy then chances are you either avoid ice cream altogether or buy a non-dairy option you're not crazy about. I also don't like the strange ingredients in some of these things (like have you ever hear of "carrageenan"? Yeah, me either). To be safe, it's best to create your own ice cream from ingredients you are familiar with.
One of my favorites is coconut and it's something I could have in just about any dessert. But you know what else screams summer? Fresh fruit! Therefore I combined two of my favorite loves to create these delicious coconut and mixed fruit popsicles.

Ingredients:
1 can of coconut milk
3 frozen bananas
**You can use other fruits of your choice or frozen versions as well**
Strawberries
Blueberries
Blackberries
Raspberries
1/4 cup of agave nectar (or your preferred sweetener)
*Popsicle molds if on hand. If not a bowl works too.*
Directions:
In a blender, mix the coconut milk and bananas until smooth. Meanwhile fill the popsicle molds with the chopped up fruits of your choice allowing space for the liquid mixture. Grab a prepared popsicle mold or container and fill with the mixture. Repeat the same step with each mold. Freeze overnight or for several hours until the ice cream has hardened. Enjoy!
