Creamy queso with chorizo will make you want to double dip

Confession time! I have weakness for cheesy treats like this creamy queso with chorizo. So does my husband, I mean we even like the stuff that comes pre-made in a glass jar, but the kind you make yourself is even tastier. If the price in calories weren't so high I might eat it every day, but this is more of a once in a while treat, but when that once in a while comes around, oh what a treat indeed!

This is the perfect sort of thing to make for any party or gathering you may have planned too because then you will be forced to share this yumminess with others. Think about it. This is perfect for noshing on during a sports cast or to set out before dinner during a party or to put next to the bath tub as you soak your troubles away. Okay, maybe the last one is a stretch, but let a girl dream. Ha!

Creamy Queso with Chorizo

Ingredients

1 tablespoon vegetable oil
6 ounces fresh chorizo, casings removed
2 1/2 cups half-and-half
8 ounces Velveeta cheese, cut into cubes
8 ounces Monterey Jack cheese, grated
8 ounces sharp cheddar, grated
2 tablespoons chopped canned chipotle chiles in adobo
1 1/4 teaspoon kosher salt
3/4 teaspoon ancho chile powder
3/4 teaspoon chipotle chile powder
2 ounces crumbled Cotija cheese or queso fresco
