A few days ago, a friend brought me some green plantains. So we decided to make mangú: the easiest and most traditional and delicious Dominican recipe. Believe me when I tell you, once you've had mangú, you want it again and again. So without further ado, let me share this recipe with you. It can be prepared in a trice and is both economical and delicious!

Mangú (Makes 4 servings)
Ingredients:
4 green plantains, peeled and cut into four
12 tablespoons (1½ sticks) butter
4 small onions, julienne cut
4 tablespoons vegetable oil
Salt
2 teaspoons white vinegar
Preparation:
- Boil the plantains in salted water until soft.
- While the plantains are being cooked, heat the oil in a skillet over medium-high heat and add the onion, seasoning with salt.
- Sauté the onion until golden brown. You may want to let them burn a little. Remove from heat and let cool. Add two teaspoons vinegar and stir. Reserve.
- Using a colander, drain the plantains, reserving 1 cup of the water.
- Use a fork to make a puree with the plantains and add the butter as you go. Add some water so the plantains don't harden. The puree should be creamy and chunky.
- Transfer the puree to a serving dish and top with the onions. Serve hot or warm.
