Ingredients:

2 lb. pork shoulder
2 T. canola oil
Spice Rub: 2 t. cumin
2 t. allspice
1 t. cinnamon
1 t. dried oregano
1 t. salt
1 t. black pepper
4 cloves garlic, minced
Juice of one orange
 2 T. apple cider vinegar
2 c. chicken or beef stock

Preparation:

1. Heat the canola oil over high in a large skillet. Rub the pork shoulder all over with the spice rub. Add the pork to the pan and brown on every side. Place the pork shoulder in the slow cooker insert.

2. Add the garlic, orange juice, apple cider vinegar, and stock to the slow cooker. Cook over high heat for 4 hours.

3. Remove the pork from the slow cooker and shred with two forks. Spoon some of the cooking juices over the top of the pork to serve. Enjoy!

Quinoa Salad with Lime Vinaigrette

1/2 cup red quinoa
½ cup white quinoa
2 c. water or vegetable stock
1 red pepper, finely chopped
1 avocado, minced
juice of 3 limes
1 T. apple cider vinegar
1 t. honey
2 T. cilantro, chopped
1/4 olive oil
3 green onions, light and dark green parts finely chopped

Preparation:

1.Wash the quinoa in a fine mesh sieve under cold water for a minute. In a medium sauce pan bring the stock or water up to a boil. Add the quinoa and bring back up to a boil. Turn the heat down to low and cook, partially covered, about 15 minutes. Fluff with a fork.

2. In large bowl, gently stir together all of the ingredients.
