With my kids back to school, I've been thinking about what to pack in their lunch boxes every day. I have to! Since I cook and I am extremely indulgent with food, my kids have always gotten spoiled in a way with delicious "homemade" lunches they take to school.
That, of course, is a challenge. I've been experimenting with different options, which of course will share here with you, and this delicious sandwich with pita bread passed the test of my boys.

This is also an option for your lunch: It's made with whole-wheat pita bread, comes packed with lettuce (so it's healthy like a salad!), and it's loaded with the proteins provided by the cheese and the salami. Ah! and don't be afraid of the salami: it gives a delicious taste, but the slices are so thin that I promise you can enjoy the flavor without the guilt.
Whole-wheat pita bread sandwich with lettuce, salami and provolone cheese
Makes 2 sandwiches
Ingredients
2 pieces of whole-wheat pita bread
2 cups of lettuce leaves rinsed and dried (I used red leaf lettuce)
4 slices of provolone cheese or cheese of your choice
8 slices of salami (as finely sliced as possible)
Preparation
- With a knife, open the bread and divide it.
- Evenly distribute the lettuce into two halves of bread.
- Distribute the cheese and salami.
- Cover with the other half of bread and cut into two.
