Awesome BLT Guacamole Recipe

Avocados are one of the few foods that I feel like I could eat every day and never tire of. My love affair with avocados started when I was a child. I remember coming home from elementary school and snacking on avocados. I would scoop them into a bowl, sprinkle them with salt, and squeeze some lemon on them. My mouth waters just thinking about it.

I will admit that I am also quite fond of bacon. I wouldn't go so far as to say that I would eat every day because that probably wouldn't be wise, but I do look forward to the days when I do eat it. Oh and guess what? Bacon and avocado go great together, but you already knew that, right?

By chance have you ever made BLT guacamole? If you haven't and you happen to be a lover of avocados and bacon, I highly recommend you make some soon. You may just love it as much as I do.

BLT Guacamole

Ingredients:

  • 4 ripe avocados
  • slice of lemon
  • dash of salt
  • 12 ounce package of bacon (cooked and crumbled ahead of time)
  • 6 leaves of shredded romaine lettuce
  • 2 diced roma tomatoes
  • pan birote or baguette of your choice (sliced and slightly toasted)

Directions:

Halve and pit 4 avocados. Mash avocados, salt to taste, add squeeze of lemon. When salting remember you will be using bacon and it tends to be salty so go easy. Fold in crispy, crumbled bacon, shredded lettuce, and tomatoes. Add a spoon to make it easy to spread on toasted bread. Enjoy!
