
It's no secret that I try to eat healthy these days. Typically I find that this is the best way for me to keep off the 100 pounds that I lost a few years ago. However, no matter how much I want to keep the weight off, I will never, ever trade in my Latin flavors for something bland. When it comes to cooking healthier meals, I'm a big believer in flavorful diet-friendly dishes thanks to ingredients like my favorite Latino condiment, chimichurri.

Traditional chimichurri sauce is made with fresh parsley and a LOT of oil. Here's my little secret: it's really easy to buy it in stores but making it yourself is even easier and cheaper. Plus, whipping up a batch at home gives you the opportunity to make a slightly healthier chimichurri sauce. I love making a lot and keeping it in a tightly sealed container in my fridge for weeks. That way I always have a little something to put on top of my fish tacos, turkey burgers and the occasional (very) lean steak. Enjoy!
Healthier Chimichurri Sauce
Makes: About 2 cups
Ingredients:
4 cups chopped fresh parsley
10 garlic cloves, minced
2 teaspoon onion powder
1 teaspoon dried oregano
1 teaspoon black pepper
1 teaspoon sea salt
10 teaspoon red wine vinegar
10 teaspoon sesame oil
3 teaspoon lemon juice
Directions:
Combine all ingredients in a food processor. Pulse together until they have combined into a creamy texture. You will notice that it thicker and less oily than store-bought chimichurri sauce. Finally, enjoy it on your favorite tacos or steak!
