Well, it seems that we're all SO in love with guacamole that we celebrate it not once but TWICE! That's right, today is National Spicy Guacamole Day after we just celebrated National Guacamole Day on the same day as Mexican Independence Day (September 16).
Hey, I have no complaints. I've been pretty obsessed with making my own guacamole ever since I learned the secrets a couple of years ago. To be honest, it's really not all that difficult and although I loved the 5 guacamole recipes we featured in the past, the BEST way I know to make guacamole is to add a little goat cheese to it. That's right, my secret to making the creamiest guacamole EVER is to turn it into goat cheese guacamole. It's my full-proof party pleaser dish that I bring almost everywhere. Let me share the recipe with you because, seriously, you're going to fall in love with it, too.

Creamy Goat Cheese Guacamole
Ingredients:
3 ripe Haas avocados, pitted
1 package (4 oz.) goat cheese
1/2 medium white onion, chopped
1 large ripe tomato, chopped
1/2 jalapeño pepper, seeded and minced
3 garlic cloves, minced
2 limes
1/2 cup chopped cilantro
Directions:
Once you have removed the pits from your avocados, get a large bowl. Using a spoon, scoop out the avocado insides and put them in your bowl. With a potato masher or your spoon, mash the avocado until it gets to the smooth guacamole-like creaminess. Next, add in your packaged goat cheese and repeat the process, mixing the avocado and goat cheese together as you mash. Then, add in your chopped onion, chopped tomato, minced jalapeño, minced garlic cloves and mix together. Finally, squeeze the juice from your limes into your almost-ready guacamole and throw in the cilantro. Mix together one last time and serve!
