There's just a few days left for Hispanic Heritage Month and I've been loving sharing all of these delicious, traditional recipes with you. Today we're visiting Uruguay, the country nestled sort of at the bottom of Brazil and bordering Argentina.
It's a small and lovely place filled with delicious food, just like all of the other dishes we've celebrated in the past month. After sharing so many traditional dishes from other nations, I couldn't be happier than to share this really unique Uruguayan sauce called salsa salu. It combines fresh veggies, herbs and peppers in a sauce that is perfect to put on top of any meat (and I bet it would work great with pork or chicken, too!). Intrigued? I know I am! Salsa Salu, a.k.a. Traditional Uruguayan Sauce (recipe courtesy of About.com)
Ingredients:
2 garlic cloves
2 large onions
1 red pepper or hot pepper
1 carrot
2 green olives
2 black olives
3 ripe tomatoes
1 cup chicken broth
1 teaspoon black pepper
10 tablespoons olive oil
1 tablespoons salt
1/2 cup white wine
1 bay leaf
1 bunch fresh rosemary
1 tablespoon flour or corn flour
1/2 tablespoon ground red pepper

Directions:
Either chop very fine or use a food processor to blend all the ingredients. Simmer for 45 to 60 miuntes, stirring frequently, until the flavors are blended and the sauce is thickened. Use as a seasoning for any type of meat.
