Here’s the Mexican lasagna YOU asked for! (EXCLUSIVE RECIPE)

A couple of years ago, when trying to figure out what to make for a then-boyfriend's birthday dinner, I came across one of the most delicious-sounding recipes I could have imagined: Rachel Ray's Mexican Lasagna. I was honestly a little surprised to find that you could make a Mexican-style lasagna but, at the same time, I couldn't wait to try it.

Now, many years later, it's one of my favorite go-to recipes for a big party. I've adapted it to my own liking and, after sharing the photo on our Facebook pages (Latin Recipes and Recetas Latinas), I was shocked at how many people demanded the recipe ASAP! Well, I'm never one to hide my delicious food creations, so here it is: the absolutely irresistible Mexican lasagna recipe.

Mexican Lasagna

Ingredients:
1/4 cup olive oil
1 pound ground turkey (chicken or lean beef would work also)
1 white onion, chopped
1 bell pepper, chopped
3 garlic cloves, minced
1 small can corn, drained
1 can black or red beans, drained (I used black)
1 can chopped tomatoes
1 package whole wheat tortillas (regular would work fine, too)
1 packet shredded Mexican-style cheese
1 cup sour cream (or plain Greek yogurt)
1 cup mushrooms, chopped
1 cup broccoli, chopped
seasoning, to taste (I used Adobo)

Directions:
1. In a large pan, heat the 1/4 cup of olive oil. Sprinkle in the ground turkey, season to your liking and cook until it is done, when no pink remains.

2. Add in the chopped onion, sauté for 5 minutes. Add in the peppers, cook for another 5 minutes, then add the garlic.

3. Add in your chopped mushrooms and broccoli, cook and mix together for another 5 minutes or until the broccoli is relatively soft. Then add in the can of tomatoes and mix well.

4. Preheat your oven to 350°Fahrenheit.

5. In a large lasagna pan, layer the bottom with the tortillas. You'll have to tear them apart to cover the bottom fully.

6. Put a layer of 1/2 the cooked turkey and veggies mixture on top of the tortillas. Sprinkle with cheese.

7. Add another layer of tortillas, then repeat with the remaining 1/2 of the cooked turkey mixture.

8. Finally, add a third layer of tortilla.

9. On top of the 3rd layer, cover with a thin layer of the sour cream or Greek yogurt (which is healthier), then sprinkle on the remaining cheese.

10. If your oven if fully heated, put the lasagna in and bake for 15 minutes (or until the cheese has melted). Take out and serve!
