Hispanic Heritage Month: Costa Rican orange pudding for dessert (RECIPE)

One of my favorite Costa Rican dishes is Arroz Gaucho or Gallo Pinto, which is an almost-black looking rice dish. I loved celebrating the beginning of Hispanic Heritage Month by making this yummy dish. Today, though, I'm celebrating Costa Rican food again–this time with a SUPER easy and delicious dessert!

I've already written about a few delicious Latin desserts, like Ecuadorean fruit salad and Brazilian chocolate fudge truffles, but I think this one's my favorite. It's simple and very refreshing. The Costa Rican Atol de Naranja is always going to be a favorite of mine and I'm betting your family will love it, too. Try it tonight!

Atol de Naranja, a.k.a. Costa Rican Orange Pudding (recipe courtesy of FoodofCentralAmerica.com)

Ingredients:
8 big oranges
2 teaspoons of cinnamon
2/3 cups of cornstarch
2 1/3 cups of sugar
1 tablespoon butter
2 tablespoons of grated orange rind

Directions:
1. Wash the oranges carefully, cut them in halves.

2. Take the juice out of them, being very careful not to break the rind.  Remove any little part left inside. In a pan mix the sugar, the juice, the cornstarch and take it to a boil, stirring constantly with a wooden spoon. Once it starts to boil, take it off the fire, add the butter and cinnamon and refill the orange empty halves, top them with the orange grated rind, as an ornament, in the borders if you wish or all in the middle. 

3. Take them to the refrigerator until it is very cold. It's just delicious as a summer dessert. You can serve it with a glass of iced tea.
