Mangú (Makes 4 servings)

Ingredients:
4 green plantains, peeled and cut into four
12 tablespoons (1½ sticks) butter
4 small onions, julienne cut
4 tablespoons vegetable oil
Salt
2 teaspoons white vinegar

Preparation:

  1. Boil the plantains in salted water until soft.
  2. While the plantains are being cooked, heat the oil in a skillet over medium-high heat and add the onion, seasoning with salt.
  3. Sauté the onion until golden brown. You may want to let them burn a little. Remove from heat and let cool. Add two teaspoons vinegar and stir. Reserve.
  4. Using a colander, drain the plantains, reserving 1 cup of the water.
  5. Use a fork to make a puree with the plantains and add the butter as you go. Add some water so the plantains don't harden. The puree should be creamy and chunky.
  6. Transfer the puree to a serving dish and top with the onions. Serve hot or warm.
