These Peruvian papas a la huancaína are hard to resist (RECIPE)

Despite the name that evokes the traditional Peruvian Creole food, papas a la huancaína are really very easy to prepare. That's just one of the reasons I enjoy making them so much, and the other one is their rich taste. The dish consists of boiled potatoes, served over a bed of lettuce and generously topped with a delicious spicy sauce made with milk, yellow ajíes and cheese. This is just one of those dishes that you have to have at least once in your lifetime. Keep reading for this recipe that you and your family will love!

__Papas Huancaína
__Makes 8 servings

__Ingredients
__2 pounds of potatoes
1 pound of chopped fresh cheese
1 can of evaporated milk
1 packet of crackers
2 tablespoons of oil
2 yellow ajíes, seeded and deveined
2 garlic cloves
half an onion
4 hard-boiled eggs cut in halves
8 olives
1 Romaine lettuce washed and dried
Salt

Preparation:

1. In a saucepan put the potatoes to boil with some salt. Once the potatoes have boiled for 20 minutes, remove from heat and let cool.

2. Once the potatoes are cool, peel and cut into slices.

3. In a skillet over medium heat with a few drops of oil, sauté the onion, garlic and ajíes until wilted. Let cool down.

4. In a blender, prepare the sauce blending milk, cheese, crackers and sauté onion, garlic and ajíes. Blend until it becomes a creamy and smooth sauce.

5. In a shallow serving dish, make a bed with lettuce leaves.

6. Place the potatoes over the lettuce.

7. Put the sauce over the potatoes and garnish with eggs and olives.
