Easy floral lavender cookies that taste like spring! (RECIPE)

May is the month of flowers. So I thought I'd share with you this cookie recipe whose ingredients include dried lavender flowers! No need to tell you how delicate they are. They are also perfect as a last-minute gift now that Mother's Day is here: Give them to your mom and abuelita, your friends, and even your children's teachers—I promise everybody will adore you!

If you don't have a cookie press, go and get one. They are very easy to use, and you can make cookies like a pro. If not, you can make dough cylinders and slice the cookies with a knife. You can also roll out the dough and cut it with your favorite cookie cutters.

Lavender Cookies (Yields 6 dozen cookies)

Ingredients:
1¼ tablespoons dried lavender flowers
1 cup sugar
1 cup butter
2 eggs
2½ cups unbleached flower
1¼ tablespoons lemon zest finely grated

Preparation:

  1. Place the lavender and ¼ cup sugar in the small bowl of a food processor and pulse six times. Reserve.
  2. In the big bowl of the food processor, place the butter with the remaining sugar, and process into dough using the dough blade.
  3. Add the eggs one at a time and keep processing.
  4. Add the flour and lavendar-sugar mix and process.
  5. Add the lemon zest and process.  
  6. Make a ball with the dough, wrap with plastic wrap, and refrigerate for at least 20 minutes.
  7. Preheat the oven to 350°F.
  8. Put the dough in a cookie press and press on a baking mat (or baking sheet), leaving 1 inch between cookies.
  9. Bake for 8 to 10 minutes. Let the cookies completely cool on a cooling rack. Store in an air-tight container.
