I've been on a serious health craze since the beginning of this year. I only eat organic, I've cut down on meat, I eat more greens and I've even substituted boiled eggs for egg white omelets for breakfast. But now I'm hearing that egg yolks aren't actually as bad for you as I thought. In fact, you're actually missing out by not eating them!

For years we've been told that foods high in cholesterol, like egg yolks, raise your risk of heart disease. But according to recent studies, that's not actually the case. In fact, nutrition coach Liz Wolfe, who's the author of Eat The Yolks, claims that egg yolks are actually really good for you. Here are six reasons why you should start eating eggs again!
Eggs ARE good for your heart: We've always heard that egg consumption increases overall blood cholesterol levels in adults which can increase your risk of heart attacks and strokes. But according to a recent study, eggs actually increase HDL–the heart-protective, "good" cholesterol. Who would have thought?
They aren't a serious health threat: According to health and fitness expert Jillian Michaels, egg yolks aren't the real problem. She claims that saturated and trans fat have a greater effect on cholesterol. "Your body actually needs the cholesterol in meat and eggs to make testosterone, which helps to increase energy and helps to build more calorie-building muscle," she posted on her site. "In fact, one study at the University of Connecticut found that fat in egg yolks actually helps to reduce LDL ("bad" cholesterol)."
They are rich in vitamins: Believe it or not, eggs contain a lot of essential vitamins and minerals our bodies need to function. They are packed with vitamin D, omega-3 fatty acids, B vitamins, and high levels of good quality protein. And half of its protein and vitamins are in the yolk!
They can help fight depression: Egg yolk also contains Choline, a vitamin that our bodies break down into bethane and helps produce "happiness" hormones like serontonin, dopamine and norephinephrine. How amazing is that?
They are good for your vision: Egg yolk is also filled with Carotenoids, lutein and zeaxanthin, which helps improve vision as well as protect our eyes from vision loss.
BUT they should be eaten in moderation: Eggs do contain a decent amount of fat so you want to make sure you're eating them in moderation. Try not to eat more than four eggs per week. According to Mayo Clinic, this is the recommended amount for adults.
