Spicy mussels & chorizo is a one pot recipe for yumminess!

Well, hello my friends. Today I have the pleasure of sharing another enticing Latin one-pot recipe with you. As you may or may not know, this is the year that I've decided to dedicate to collecting fabulous recipes with Latin flavor that can be made in one pot. Why? Because they make my life easier and more delicious.

I'm super excited about today's one pot recipe find because I am a huge fan of seafood and this spicy mussels and chorizo dish makes me hungry just thinking about it. It also made me realize that I have never cooked mussels before. Time to change that.

Spicy Mussels and Chorizo

Ingredients

3 tablespoon extra-virgin olive oil
1 large shallot, minced
2 garlic cloves, thinly sliced
1/4 teaspoon crushed red-pepper flakes
2 cups dry white wine
3 cups canned crushed tomatoes with juice
4 ounces dried, hot chorizo, cut on the diagonal into 1/4-inch slices
1 teaspoon coarse salt teaspoon coarse salt
Freshly ground pepper
2 pounds mussels, scrubbed and debearded
1/3 cup coarsely chopped fresh flat-leaf parsley
