I admit it: I was one of Paula Deen's critics after she admitted to having been diagnosed with Type 2 Diabetes back in January. I wasn't angry that she was admitting that she has been plagued with the disease for the past 3 years. Rather, I was annoyed that the Queen of Southern Cooking was only revealing the information after a drug company paid her to be their spokesperson for a diabetes drug.
Now that she's singing a different tune, though, and actually changing the way she eats, I am really impressed. In fact, I'm excited that she's lost 30 pounds (Go, Paula!) and embracing a new lifestyle of healthy eating.

In this week's cover story for People magazine, Paula is showing off her new body and, if I do say so myself, she's looking pretty good these days. She's talking about how the diabetes diagnosis has changed her life and her newfound appreciation for Greek salads and baked fish (and saying goodbye to trigger foods, like mashed potatoes). How did this all happen? She explains:
I do think differently now. I'm more aware. It took me a couple of years to get to this point. If you make a few small changes, they can add up to big results.

Sounds to me like she's embracing a Mediterranean-style way of eating and I'm really glad for her. And I'm particularly excited to see her sharing her new get-slim recipes. I hope that this will encourage and inspire others (especially Latinos) who have been diagnosed with diabetes that they can still make themselves healthier by eating right (along with any doctor-prescribed medication). If the face of butter-laden Southern food can do it, so can the rest of us!
