The price of eggs is so high right now! How high is it? It’s so high that the other day I saw a man walking down the street with a carton of eggs like it was no big deal and thought to myself, “Put those huevos away or someone is going to jump you.” And when I thought “someone,” I was thinking I might be the one to jump him for those eggs.

They say absence makes the heart grow fonder and I guess that’s what’s going on with me and eggs lately. I still get them to eat as eggs, but they are so pricey that I don’t use them as much in other recipes because it seems like a waste. Fortunately, there are plenty of tasty eggless recipes available.
