Singer and TV personality Chiquis Rivera is a fan of the keto diet and has been following it for some time now. In a nutshell, the keto diet is a high-fat, protein-heavy, low-carb diet that forces the body to burn stored fat. Now, Chiquis being Chiquis does keto her way, and she calls it "ChiKETO." How cute is that? "I love it and we call it ChiKETO because, you know, I'm a boss and I don't necessarily follow exactly how keto goes," she says. "I don't count macro and things like that, but obviously I do follow what keto's about. So, I do a lot of keto-friendly things, so that's why we call it ChiKETO."

Chiquis has actually worked on her ChiKETO way of eating and cooking to the point that in August 2020, she released a cookbook called Chiquis Keto: The 21-Day Starter Kit for Taco, Tortilla, and Tequila Lovers. Chiquis' keto recipe for classic soup doesn't actually call for many modifications of the traditional version, making it an easy meal to incorporate into your keto meal plan. It's mostly simple, whole foods, including, of course, chicken, veggies, and herbs.
Jalapeño ham keto taquitos are the perfect party food.
Whether you're whipping up a game-day snack or keto appetizers for a party, Chiquis' jalapeño ham keto taquitos are a tasty and satisfying option. The tortilla is replaced with grated cheddar cheese and stuffed with a jalapeño, ham, and cream cheese mixture.
A chorizo bowl that you could eat every day, according to a famous chef.
Chiquis made an appearance on Un Nuevo Dia and shared how to make her chorizo keto bowls with Chef James. He said of her recipe, "I could eat this every day," which is an amazing compliment coming from him. The recipe calls for 1 tablespoon of ghee (clarified butter), 1 Mexican chorizo, 2 eggs, and a 1/4 cup of cream.
These keto-friendly chocolate-covered strawberries are beyond easy to make.
Chiquis' recipe for her Keto Chocolate Covered Strawberries is simple:
- 8 strawberries
- 2 oz. 100% dark chocolate (no sugar added)
- 1 teaspoon erythritol, monk fruit, or stevia

How about some adults-only 'sandia' paletas?
These refreshing "watermelon" paletas feature tequila, which means they are only for adults. You could, of course, leave out the tequila if you want to make a batch that the kids can enjoy, too. Also, if you're wondering why the "sandia" or "watermelon" is in quotes, it's because she actually uses strawberries to make these cool treats.
Lasagna made the ChiKETO way.
In this video, Chiquis shows you how to make a lasagna the ChiKETO way. It involves using low-carb flatbread instead of lasagna noodles. But there's more: Chiquis shares that you need to shred your own cheese for this recipe. Why? Because the shredded cheese you buy at the store has added carbs in it. Did you know that?
This is how you make a ChiKETO horchata smoothie.
Normally, Chiquis isn't the kind of cook who measures things. She's more of a home cook who just knows how much of what to add from experience, but in this particular video, she does lay out some measurements. Horchata is normally made from rice, but rice is not keto-friendly, so this recipe has no rice in it.
Make a breakfast burrito the ChiKETO way.
Chiquis opted for a turkey burrito to demonstrate how to make a keto-friendly burrito, but keep in mind that you can make it out of chicken or beef or whatever protein you prefer. The burrito is rounded out with eggs, cheese, mushrooms, spinach, salsa, and avocado. Doesn't that sound filling and like it will keep you going strong for hours?

These fried chicken tenders are made in an air fryer, and guess what the crispy "breading" on them is made of? The breading is made out of chicharrones! Actually, Chiquis says that chicharrones are "your best friend if you are on keto." Love it!
Let Chiquis show you how to make keto pizza with a cauliflower crust.
This recipe is so easy because you don't have to make the crust or the sauce from scratch. You just buy a premade low-carb cauliflower crust to build your pizza on. Also, make sure that the pizza sauce that you buy has no added sugar, because on keto you can't have much sugar.
This tostada recipe uses no beans and no tortillas.
Beans are not keto-friendly, and Mexican dishes, like tostadas, often include beans. Also, tortillas are high in carbs, so they aren’t keto-friendly either, which is why the tostada part of this recipe is made out of shredded mozzarella that gets cooked and turned into a “tostada” shell. Instead of beans, Chiquis uses avocado as the spread on the tostada.
Chiquis makes keto paletas out of cucumbers.
Now, you might think that paletas have too much sugar in them to be an option for a keto-friendly diet, but not the way Chiquis makes them. She makes them with lemon, Tajín, sugar-free chamoy, cucumbers, and stevia for sweetness. It's a fairly easy recipe that you can make with the help of your kids.

For those times when you are out and want to grab yourself a little something pink to sip on, Chiquis says the Pink Drink at Starbucks is a favorite! Here’s how to make it keto-friendly:
- Ask for an iced sugar-free passion iced tea (or a sugar-free strawberry refresher if they have it).
- Add 2 pumps of sugar-free vanilla.
- Add heavy cream.
- Add freeze-dried strawberries.
Another really easy keto-friendly breakfast idea from Chiquis.
Seriously, it doesn't get easier than this. Basically, she boils two whole eggs and enjoys them with sliced avocado and string cheese. You get some great protein and good-for-you fats in a satisfying and simple-to-make meal. It's a winner!
How about some ground beef with radishes instead of potatoes?
You know how a lot of the times people include potatoes in their ground beef? Well, a keto-friendly swap is to replace the potatoes with radishes. Chiquis also suggests serving the ground beef with radishes alongside broccoli and cheese. Yum.

Dessert in a glass? Why, yes! You'll need:
- 3.5 oz. cream cheese
- 1 cup raspberries
- 1 cup unsweetened almond milk
- 1/2 tsp. pure vanilla extract
