Beach weather is officially here–the only issue? Last year's swimsuit fits extra tight and my pancita is just not getting the "slim instantly" memo. We all try to eat healthier and lighter in the summer and Jennifer Lopez is no exception. The Latina celeb shared her favorite summer ceviche recipe and it's seriously a great go-to, guilt-free dish.

Slimming down doesn't mean you have to get rid of your curves! J.Lo manages to look fit while maintaining a healthy size 6 or 4. It's possible! According to the fitness site she partnered with last year, the Boricua pop star swears by this ceviche. "Now I incorporate a little fresh fish, here and there," she told Ryan Seacrest last year. If this is J.Lo's secret for looking fabulous over 40, then we should all be giving this recipe a try.
This recipe serves 6.
Ingredients:
- 1 pound sea bass (cubed small)
- 1 cup Choclo corn kernels (cooked)
- 1/2 cup green apple
- 1 tablespoon red onion (chopped)
- 2 limes (zest and juice)
- 1/2 tablespoon extra-virgin olive oil
- 1 tablespoon chives
- 1 tablespoon plum Roma tomato (seeds removed, diced)
- 1/2 teaspoon kosher salt
- 1 cup cilantro (reserve and toss in before serving)
Instructions:
Chop the seafood into small, bite-sized pieces. In a large mixing bowl, combine ingredients and mix well. Place in plastic container and marinate in the refrigerator for at least 2 hours before serving.
