Passion fruit, parcha, or simply maracuyá, this fruit is, with tamarind, the most acid of all. But it tastes amazing. This recipe is a sort of agua fresca, refresing and full of vitamins and flavor, with the delicate touch of yerbabuena.

Passion fruit is low in calories, but rich in vitamins A, B and C. It also has anti-oxidant properties. I like that its acidity makes it very refreshing–even more when I combine its tanginess with mint leaves. Check out the video and the full recipe below:

Passion fruit and mint agua fresca
Makes 4 servings
Ingredients
1 cup passion fruit concentrate, defrosted
2 cups of water
1/4 cup sugar
12 leaves yerbabuena or mint
To make:
1. In a pitcher, mix the passion fruit concentrate with water and sugar.
2. Cut the mint leaves in strips and mix with the water.
3. Add ice and serve. Enjoy!
