Ingredients
For this recipe, you'll need:
1 onion
3-4 jalapeño peppers
4 Roma tomatoes
1 red pepper
2 garlic cloves
Don't forget the lemon
The juice of 2 lemons will be enough for this salsa and it yields 24 ounces.
Cilantro
Of course, our favorite herb is mandatory.
To the baking sheet
Preheat oven to the highest temperature in broil mode. Line a tray or cookie sheet with aluminum foil and place tomatoes, onions, garlic, jalapeños and peppers there. Sprinkle them with some drops of olive oil.
To the oven
Put oven rack on top, and place the tray on it.
Check the oven
The idea is that your veggies get charred, but do not neglect the oven because you don't want your food to burn.
Almost ready
Once you remove the baking sheet from the oven, let cool down so you can put your vegetables in the food processor. You can also blend your salsa.
Where the magic happens
Put all ingredients in the food processor bowl, and squeeze the juice from the lemons. Add some salt.
Process
Process until your salsa has the desired consistency.
The final touch
Last but not least, add the cilantro leaves.
Done!
