Heavenly lactose free tres leches cake that EVERYONE can enjoy

I'm so excited to share a recipe for lactose free tres leches cake that I made this weekend. I don't usually brag on things that I make myself, but this, my dears, calls for a bit of bragging. First of all it turned out DELICIOUS if I do say so myself, but just so you don't think I'm the only one who finds it yummers, my kids and my husband all loved it too. The other thing that is awesome about this recipe is that it is semi-homemade, which makes it so easy to make and quicker than your average tres leches cake.

Why go lactose-free on a tres leches cake you say? For all kinds of reasons, my dears. To begin with, this lactose free tres leches cake is a delicious option for people who have a lactose intolerance and for those who don't, it makes for a lighter version of a cake that can sometimes be a bit heavy. I liked this cake so much I can't wait to make it for my mom when she comes to visit. I'm not even going to tell her I made it lactose free until after she eats it, I bet you she won't even notice.

Lactose Free Tres Leches Cake

Ingredients

1 box cake prepared (could be vanilla, white or yellow cake)
1 cup Silk Almondmilk
1 cup rice milk
6 ounces of lactose free vanilla yogurt
Slivered raw almonds

Directions

Bake the cake according to directions. Poke the top of cake every half inch. I used a chopstick to do this, you can use a fork. Let sit for 5 minutes.

While the cake is sitting, in a large bowl mix together Silk Almondmilk, rice milk and lactose free vanilla yogurt. Pour carefully and evenly over the cake.

Cover and refrigerate for about 3 hours. Top with slivered almonds
