As far as I'm concerned a kitchen without garlic is no kitchen that I want to cook in. Just about every savory dish that I make requires fresh garlic and as much as I love garlic, I do not like to peel it. Peeling garlic is a tedious, time-consuming task. Usually what I do is take the a garlic clove with the skin still on it, put it on a cutting board, then turn a chef's knife sideways and place it right on top of a clove and smack the heck out of it. This makes the skin come right off, but leaves me with a smashed garlic clove. I'm fine with that most of the time, but if I want to keep the pretty clove intact that method does not work and carefully peeling the skin off with my fingers blows, especially if I'm doing a bunch of garlic.
Well, now I know a clever trick for peeling a whole head of garlic, with the help of a microwave. It's BRILLIANT!

Basically, all you have to do is take the garlic you want to peel and put it in your microwave for roughly 20 seconds. Every microwave is a tad different so you may need a few more seconds or a few less. You're not trying to cook the garlic, so be careful not to overheat it. When you take the garlic out of the microwave cuidado because it might be a little hot and get ready to be surprised at how easily that skins comes off.
How great is that? I know you can buy pre-peeled garlic, but I've never done that because then I feel like the garlic is going to go bad before I use it. I'd rather have that skin stay on until I'm ready to use the garlic.
