Last night I was freezing. Straight up shivering in my living room. It would have been delightful to curl up on the sofa with a delicious bowl of this warm coconut rice pudding and catch up on my shows, but last night I didn't know how to make it.
I found this recipe today and I'm stoked because not only does it look delicious, but it is easy to make and only takes 20 minutes. Brilliant! With other puddings I normally have to wait for them to cool down before I'm supposed to dig in, but not with this one.

This recipe suggests garnishing with pistachios before serving, which I love, but I bet it would also be great with almonds, raisins or dried cranberries. Or all of the above!
Rice pudding of any kind brings back beautiful memories of my childhood where arroz con leche always felt like a bowl of love. This version is bound to feel like a warm hug.
Warm Coconut Rice Pudding
Ingredients
1 cup water
1 cup uncooked instant rice
1/2 cup sugar
3 tablespoons cornstarch
1/4 teaspoon salt
1 1/2 cups 2% reduced-fat milk, divided
2 large egg yolks
1 cup light coconut milk
1/4 cup flakes sweetened coconut
1 teaspoon vanilla extract
1/4 teaspoon ground cinnamon
1/4 teaspoon ground cardamom
1 tablespoon chopped pistachios
