Lent recipe: Ancho-honey glazed salmon to die for

Salmon isn't everyone's thing, I totally get that. But salmon is my thing. I love it. It makes me feel like a fancy lady everytime I eat it and I'm gonna go out on a limb here and say that if more people gave it a chance it would become their thing too. It's good for you, it tastes amazing and it is really easy to prepare.

I've got a wonderful ancho-honey glazed salmon recipe to share with you that will make everyone at your table feel like they are dining at a high-end restaurant, but is probably one of the easiest meals you can make. It also happens to be a perfect meatless or Lent recipe.

Ancho-Honey Galzed Salmon

Ingredients

1 cup water
3 dried ancho peppers
1 Tbsp. honey
1 Tbsp. apple cider vinegar
1 medium onion, chopped
1/2 cup Hellmann's® or Best Foods® Mayonnaise Dressing with Olive Oil
4 salmon fillets or salmon steaks (about 1 lb.)

Directions

Pour boiling water over ancho chili peppers; let stand covered 10 minutes. Remove peppers from water and discard water. Process peppers, honey, vinegar and onion in blender or food processor until smooth. Turn into medium bowl. Stir in Hellmann's® or Best Foods® Mayonnaise Dressing with Olive Oil. Reserve 1/3 of the Mayonnaise mixture.

Grill or broil salmon, turning once and brushing with remaining Mayonnaise mixture, until salmon flakes with a fork, about 15 minutes. Serve salmon with reserved Mayonnaise mixture and garnish, if desired, with additional chopped green onions.
