
I love the name of this dish, pollo borracho. I mean come on, what isn't funny about saying you are going to serve a drunk chicken for dinner? It's better than having your tío borracho come over and make a scene during dinner. Am I right or am I right?
This week I'm amused and excited to share yet another one-pot recipe with you. As you may or may not know, I'm on a year long quest to find fabulous one pot recipes and share them with you. This one looks delicious and don't worry you don't have to get a chicken drunk ahead of time to prepare it. You just need a little tequila and white wine for cooking and if you sample the tequila before you cook with it, I won't tell a soul. ¡Salud!

Pollo Borracho
Ingredients
1 (4-pound) frying chicken, cut into 8 pieces
1 teaspoon dried Mexican oregano
1/2 cup extra-virgin olive oil
1 large onion, sliced thickly
3 cloves garlic
1 bay leaf
1/2 cup dry white wine
1/2 cup tequila
1 cup Spanish olives, drained
