Latin Crock-Pot: Chipotle chicken noodles are spicy & satisfying

This is quite possibly one of the easiest slow cooker recipes ever. It only has six ingredients and yet it is guaranteed to be packed with flavor. Now, I don't know about you, but a weekly pasta night is pretty standard in my home. It's an easy go to option, but I'm not gonna lie, on occasion, I get a little bored of the standard red sauce. Sure it's good, but I have it almost every week and, well, a little variety never hurt a noodle, did it? This Crock-Pot chipotle chicken and pasta recipe gives your noodles a bit of Latin flavor. Yum!

I also love that this ends up being a one pot meal with less clean-up than my "regular" pasta night options. No skillet or pot or strainer to deal with in the end. Mami likes.

Crock-pot Chipotle Chicken

Ingredients

No stick cooking spray
1-1/2 pounds boneless skinless chicken breasts, cut into 1-inch pieces
1 can (28 oz.) crushed tomatoes
2 tablespoons chopped chipotle peppers in adobo sauce
3-1/2 cups water 6 ounces dry egg noodles, uncooked
