Latin Crock-Pot: Fiesta chicken with rice & beans is a one-pot meal celebration

I love me some one pot meals. I mean, how great is it to just make an entire meal in one pot? One and done! No sides, nothing else to worry about. It's a busy cook's dream. I'm loving this slow cooker recipe for fiesta chicken with rice and beans because it is a one pot party. Set it up in the morning and come dinner time all you have to do is put it on a plate and say, "Dinner is served!"

Now if I could just figure out how to get my family to eat straight out of the pot so that I would have less dishes to do, that would be amazing. Hee hee.

Fiesta Chicken with Rice and Beans

Ingredients

PAM® Original No-Stick Cooking Spray
2 cans (10 oz each) Ro*Tel® Original Diced Tomatoes & Green Chilies, undrained
1 can (15 oz each) Hunt's® Tomato Sauce
1 can (15 oz each) Rosarita® Premium Whole Black Beans, drained, rinsed
1 cup frozen whole kernel corn
1 pkg (1.25 oz each) 30% less sodium taco seasoning mix
2 cups water
1-1/2 pounds boneless skinless chicken breasts, cut into 24 pieces
1-1/2 cups parboiled white long-grain rice, uncooked
