Thanksgiving leftover recipe: You have to try this turkey chili with poblano peppers

Thanksgiving is over but I'm sure much of the turkey is still there. Here's a scrumptious turkey chili with poblano peppers to feed your family this coming weekend while making the most of your leftover turkey. Happy holidays!

Turkey chili with poblano peppers

Makes 4-6 servings

__Ingredients
__2 tablespoons olive oil
2 poblano peppers, seeded, deveined, minced
1 pound of leftover turkey, shredded
4 cloves garlic, minced
4 teaspoons of chili powder
1 1/2 cups of chopped tomatoes
3 cups of beans of your choice, cooked and drained
1 cup of chicken broth
Salt and pepper to taste
Sour cream

Preparation

1. In a heavy saucepan with a lid, over medium heat, put the oil to heat and sauté the poblanos with onion and garlic until wilted, about 4-5 minutes.

2. Add the turkey and sauté for 3 minutes.

3. Add the chili powder and season with salt and pepper.

4. Add tomatoes, beans and broth. Reduce heat to low and simmer uncovered for 15-20 minutes.

5. Cover and cook for 10 minutes.

6. Serve hot with a spoon of sour cream.
