I cannot imagine a Thanksgiving dinner without mashed potatoes. I'm convinced mashed potatoes are a MUS at the Thanksgiving table so we can have them with gravy. Period. And since we're making no exceptions, here is my recipe of these scrumptious mashed potatoes with an ingredient we all love: queso fresco. I hope you like them!

Mashed potatoes with queso fresco
Makes 8 servings
__Ingredients
__3 pounds of potatoes, peeled and cut into 2-inch pieces
Salt
10 tablespoons of unsalted butter, melted
1 cup of warm milk
1/2 cup of heavy cream
1/2 cup grated queso fresco
Pepper
Preparation
1. Put the potatoes in a pot with water to cover them by 3 inches. Add salt and bring to a boil over medium heat.
2. Once the potatoes boil, cook them for 20 minutes. Turn off the heat and reserve.
3. Mash the potatoes adding milk, cream and butter and combine.
4. Add the cheese and salt and pepper to taste.
5. Serve warm.
