Green beans are a constant on the Thanksgiving table not only because they are in season and at a very good price, but also because they add green to the warm color palette of this very special day.
Today's recipe is the easiest way to bring green beans to your table. To keep it simple on Turkey Day, one or two days in advance, trim and blanch them and save them in the refrigerator. Just before serving, sauté the beans and add the roasted pepitas!

Sautéed green beans with pepitas
Makes 8 servings
__Ingredients
__2 pounds of fresh green beans, with the ends cut off and cut in 3
Salt
1/2 cup of roasted pumpkin seeds (pepitas)
2 tablespoons of butter
1 tablespoon of olive oil
3/4 cup of onion, scallion or shallot, minced
Freshly ground black pepper
2 tablespoons of minced fresh parsley
Preparation
1. Put water and salt in a pot to boil.
2. Once the water is boiling, add the beans and cook for 4 minutes.
3. Strain the beans and place them in a bowl with ice water to stop the cooking.
4. Drain the beans.
5. In a skillet over medium heat, toast the pepitas, stirring constantly for 3 minutes, until they begin to brown. Reserve toasted pepitas on a plate.
6. In the same skillet, melt the butter with the oil and sauté the onion for 5 minutes, until wilted.
7. Increase the heat to medium-high and sauté the beans, stirring occasionally, for 3-4 minutes.
8. Add salt and pepper to taste, sprinkle the pepitas and parsley and serve immediately.
