Mexican Pizza
Ingredients:
8 corn or flour tortillas
2 cups of refried beans (15 oz. can)
1/2 lb. ground beef
1 medium red onion, finely chopped
1 medium carrot, peeled and shredded
1 teaspoon-1 tablespoon chili powder
1 1/2 teaspoons cumin
1/2 teaspoon paprika
1/2 teaspoon salt
1 teaspoon pepper
2 green onions, chopped
1/2 cup salsa
2 cups shredded Monterey Jack cheese
1 cups cheddar cheese
Optional: diced tomatoes, diced avocados, slicedblack olives, green chile, chopped cilantro
Preparation:
1. Spray two rimmed baking sheets with nonstick cooking spray. Preheat your oven to 350ºF.
2. In a medium skillet over medium heat, cook the beef with the carrot and onion. When the beef is evenly cooked. Drain off any excess grease. Stir in the tomato paste, chili powder, cumin, paprika, salt and pepper. Cook a minute longer. Remove from the heat.
3. Place two tortillas onto each baking sheet. Spread 1/4 of the refried beans on each tortilla. Top with 1/4 of the beef mixture. Place another tortilla on top of the beef mixture. Spread 2 tablespoons of the salsa on top of each tortilla. Sprinkle with 1/4 of the cheese. Bake for 10 minutes and sprinkle on your favorite toppings. Enjoy!
