Chicken tamal casserole: A yummy twist on a Latino classic

Purists will be up in arms that I even suggest the idea of a tamal casserole because quite frankly, tamal casserole does not equal tamales. Well, gosh darn it, don't you think I know that? Of course I do and I'm not saying that this tamal casserole will take the place of tamales during New Year's or any special occasion or that it will put tamal makers and purveyors out of business. All I'm saying is that this is a fun and satisfying riff on the original. You know that whole, imitation is the sincerest form of flattery thing?

So purists go on and stick your nose up in the air at this permutation of a tamal, but be warned that while your nose is up in the air, you may just catch a whiff of the scent of this casserole and find yourself forced to try it. I promise not to make fun of you as long as you share some with me.

Chicken Tamal Casserole

Ingredients

1 cup (4 ounces) preshredded 4-cheese Mexican blend cheese, divided
1/3 cup fat-free milk
1/4 cup egg substitute (I'd go ahead and use eggs)
1 teaspoon ground cumin
1/8 teaspoon ground red pepper
1 (14 3/4-ounce) can cream-style corn
1 (8.5-ounce) box corn muffin mix
1 (4-ounce) can chopped green chiles, drained Cooking spray
1 (10-ounce) can red enchilada sauce
2 cups shredded cooked chicken breast
1/2 cup fat-free sour cream
