You’ll love these marinated Puerto Rican gandules (RECIPE)

When I asked my friend Jeannette Quiñones-Cantore, from the cooking blog Sazón Boricua about a Puerto Rican typical dish to celebrate Hispanic Heritage Month, she sent me these pickled gandules that I'm sharing with you today.

__Marinated Puerto Rican gandules
__Makes 6 servings

__Ingredients
__2 cans of green pigeon peas, drained
1 small onion, minced
2 bay leaves
2 tablespoons of *sofrito
*1 teaspoon of peppercorns
3/4 cup of olive oil
1/4 cup of white vinegar
1/4 cup of chopped cilantro
1 teaspoon of salt
1 red bell pepper, chopped
1/2 cup of stuffed olives, chopped
1 jalapeño pepper, minced
1/2 cup of celery, chopped

Preparation

1. Sauté the onion until wilted, add the sofrito, red bell pepper, vinegar, olive oil and bay leaves.

2. Add the peppercorns, olives, celery and jalapeño and pour this mixture over the gandules in a large bowl.

3. Add the cilantro and salt to taste and stir.

4. Let stand for 2 hours before serving.

This can be serve with pita bread, toast or green fried banana plantains.
