5 Quick & healthy dinners for busy nights

I love to cook, but with a husband who works night shifts and a toddler with a fast metabolism, I absolutely have to get dinner on the table within 40 minutes on an average night. Though my son has yet to reach the school years, I'm sure there are also tons of parents attempting to serve up fast and nutritious dinners in between school pickups, practices, and rehearsals.
